The 1999 growing season was optimal from start to finish, with temperate, even weather from budbreak in spring up to the last day of our harvest, October 30. All of our Cabernet Sauvignon, along with the Petit Verdot, achieved full ripeness in the last few weeks of October. Sugars increased in conjunction with true physiological maturity, an indicator of a rare and near perfect vintage. Yields were miniscule, in the two ton per acre range, throughout our Cabernet blocks. This level of crop was ideal for the mild heat of the vintage, as any additional tonnage on the vines would have compromised full ripening. The fruit was gently crushed to fermenter and extracted by pumpover. Given the wonderfully even ripening of the fruit, extraction was extended well past dryness to maximize and soften the tannins. Primary and malolactic fermentations utilized native yeast and bacteria, respectively, as is the hallmark of all estate wines at Chalk Hill. The wine was racked quarterly and aged for twen Read More

A late ripening concentrated the flavors while also assuring that the ying and yang of the fruit-the acid and sugar levels-were in perfect balance. The result is a rich, juicy Cab with an expressive nose of cassis and spice. Flavors of black cherry and cocoa dominate this silky wine, but there are also hints of eucalyptus and mint. The 2005 is 90 percent Cabernet Sauvignon with small amounts of Merlot, Cabernet Franc and Petit Verdot filling out the remainder of the blend. Try this wine with braised short ribs or a creamy Camembert. Read More
Volcanic Hill is comprised of 8 acres of south facing hillside vineyard. It is the warmest of all our microclimates. The color of the soil is gray, and the consistency is that of fluffy, volcanic ash, originally deposited from the eruption of Mt. Konocti 8 million years ago. Volcanic Hill is the longest lived of our wines. Our winemaker describes these wines as full bodied, loaded with intense ripe berry fruit, cassis, violets and a smoky richness, finishing with good length and firm tannins. Read More
The grapes selected for this wine are sourced from Paso Robles, Monterey, and Napa counties. After fermentation, the wine is racked to a combination of French (80%) and American oak barrels for a period of 12 months.Hints of licorice complement the rich aromas of blackberry and boysenberry. These jammy forward fruit flavors are also apparent on the palate and are balanced nicely with spice, a silky mouthfeel and smooth tannin structure. The full-bodied flavors and spicy nuances of this Cabernet Sauvignon will pair nicely with herb-crusted leg of lamb, marinated hanger steak or a pasta dish with a tomato-based sauce. 12 pack Wine California Still Wine Read More
